PASSION ON A PLATE  :  Sage Bespoke Grill at Makati Shangri-La, Manila serves passion on a plate with its Great Australian Beef menu.  A powerhouse collaboration between Chef Sebastian Barcudes, and John Dee farmer, David Hart, this curated selection features premium grain-fed Australian Beef in unique culinary presentations.

Founded in 1939 by Frank P. Hart, John Dee is the oldest single-family owned meat processor in Australia, and is well known for its outstanding beef products.  The meat presented today is the result of 80 years of experience, development and four generations of the Hart family’s passion.  This 7 November, the farmer behind Great Australian Beef, David Hart, flies to Manila to launch this menu with Chef Sebastian Barcudes at Sage Bespoke Grill.

The Great Australian Beef menu offers three intriguing specials featuring an array of premium John Dee cuts.  Also known as the Tomahawk’s little brother, the Hatchet is a young grain-fed bone-in ribeye, Josper-grilled to one’s liking.  A match for the ages, Grain-fed vs. Grass-fed features, on one corner, an old-time favorite premium grass-fed striploin with clear meat flavors and healthy yellow fat; and on the opposite, a luscious gold grain-fed striploin, with a marbling score of three.  Completing this outstanding selection is the farmer’s favorite cut – grain-fed rump with a marbling of three, slow-cooked in a spicy beer marinade, then chargrilled to perfection to make for a sumptuous dish called the Yarranbrook Steak.
