One of the dishes at Gallery VASK’s tasting menu is the Tiradito. Tiradito is the Filipino ceviche of raw tuna loin, drizzled with a gel mixture of coconut milk, kuzu and local taban-taban. Pickled spicy seaweed adds a flavorful kick, contrasting with the grated coconut smoked with sampaloc wood. Photo provided by VASK.

The local cereal adlai accentuates this dish, made with local pigeons and sea urchin flavored with bagoong (shrimp paste) and oil; and garnished with gotu kola hearts and guyana chestnuts. It was through Chef Chele’s travels that he discovered these chestnuts were brought by the Spaniards from South America to Bukidnon province. Photo provided by VASK.

Chef Margarita Forés was awarded Asia’s Best Female Chef 2016, paying homage to her years devoted towards uplifting and sharing the culinary craft with others through her restaurants, her cuisine and her vision. Last year was another feather on her cap of achievements, as an integral part behind Madrid Fusion Manila and one of its headline speakers. Her life and accomplishments truly serve as an inspiration to other aspiring chefs from the Philippines.
