Aiming to showcase the work of celebrated chefs from around the world, CAV Wine Shop and Café will be hosting Paris-based Chef Victor Magsaysay, serving his Filipino-inspired modern French cuisine in a formal six-course dinner paired with wines on February 11, 2016 at 7:00pm.
Chef Victor Magsaysay is currently based in Paris, where he runs the award-winning kitchens of Ito Izakaya and Ito Chan, in the popular South Pigalle area of the 9th arrondissement. Though he has made France his home for many years, Chef Victor – a designer and artist by training rediscovers Philippine seasonal vegetables to showcase his unique take on innovative Filipino ingredients.
The menu he will be preparing for the evening was created as an homage to the dishes that he grew up with. More than a personal trip down memory lane, the menu also aims to serve up a slice of Philippine history; with influences from China, the South Pacific and Europe, placing it at the crossroads of trade, industry and culture since the 10th century. He narrates all of this through his masterful combination of Filipino ingredients and spices, with modern French hauté cuisine techniques.
The menu includes hors d’oeuvres of Davao Goat Cheese Chicharrones and Cebu Ngohiong, ‘Taro and Crabmeat Roulade, Scallop Sinigang, Bayabas Smoked Barracuda Fillet, Pork Belly and Wild Boar Sausage, Carabao Milk Risotto, finishing off with Black Pepper Piaia and Pomelo Sherbet. The dinner will include wine pairings from CAV’s extensive wine list.
For those who can’t make it on February 11, Chef Victor’s unique menu will be available at CAV Wine Shop and Café until the end of February 29, 2016.
WINE DINNERS FOR A CAUSE
This special dinner is part of CAV’s new Guest Chef Series for 2016. This year’s theme is Wine Dinners for a Cause, where celebrated chefs from near and far are invited to showcase their craft during a dinner paired with selected wines from CAV’s extensive cellar.
In addition, the Guest Chef menu will be featured at CAV for the duration of one month, with proceeds donated to a charitable organization of the chef’s choice. For Chef Victor’s wine pairing dinner, the proceeds will go to Casa San Miguel Rural Community Educational Program for Arts and Music by Alfonso Coke Bolipata.
