Truly an exceptional dining experience, Discovery Primea’s Flame opened its doors to Manila’s elite and media guests last June 22. Packed with an impressive guest list, Manila’s fine dining scene is about to change as this newest creation under the partnership of General Manager David Pardo de Ayala and Executive Chef Luis Chikiamco offers the next ultimate dining destination.
FLAME’s name takes its inspiration from the team’s burning passion and desire to create new experiences through food.  “At FLAME we are pushing modern European cuisine and Asian combinations in  bold, intriguing directions,” shares Executive Chef Luis Chikiamco.   “Every dish you find at Flame is created with a deep respect for and understanding of the ingredients, knowledge of culinary techniques and overall mastery of their association,” adds David Pardo de Ayala.

With the intention of both surprising and delighting, familiar dishes are seared, grilled, torched from the Josper Oven and served with delightful twists along with the widest selection of homemade mustards and dressings created through cold infusion.  Even the everyday, becomes a special treat in offerings such as ‘Quezo de Bola and Hamon’, inspired by the great Massimo Bottura, Seared Chilean Sea Bass with Shiitake Mushrooms, Garlic Confit, Madeira-Mushroom Broth, and Braised U.S. Short Ribs atop creamy Celeriac Puree and Ginger Tamarind Sauce.
Other stand-out dishes from the FLAME menu include the Asian Beef Carpaccio with Fresh Arugula, Wasabi Nuts, Sriracha and Soy Vinaigrette, the Pan Seared Foie Gras with Grilled Gggplant, Pickled Pears, Nori Flakes, Teriyaki Glaze and Roasted Scottish Salmon with Braised Savoy Cabbage, Japanese Pickled Ginger and Aromatic Sesame Sauce, a sure delight to the palate.

With a carefully curated wine and cheese collection, and an impressive set of chocolate, fruit and cheese-based desserts, FLAME is also the perfect destination for after-dinner socials. Linger long after dinner to enjoy a Hot Chocolate Soufflé, paired with a cloud of Colombian Coffee Foam, Caramelized Bananas and Vanilla Ice Cream, or a special cocktail created with our signature Porthole Infuser. Fruitlovers will enjoy APPLE, APPLE, APPLE!, featuring Caramelized Apples, Calvados Cream, and Apple Gelée on a Cinnamon Puff Pastry.
