Sofitel Philippine Plaza celebrates with a new cookbook
It was 2006 when the Manila dining scene beheld the unveiling of a culinary jewel in Sofitel Philippine Plaza. Spiral, its flagship restaurant, has been a witness to gatherings and celebrations in the ten years that it has been around, evolving to make its mark as the preferred dining destination. What better way to celebrate a decade of this landmark restaurant than with a cookbook that captures a decade of culinary excellence with beloved and iconic dishes?
Spiral’s culinary artisans have collaborated to produce a commemorative collection of 40 dishes spanning the international cuisines that reflect the 21 dining ateliers from Korean, Chinese, Japanese, Indian, Filipino to French in A Decade of Spiral: Celebrating a Journey of Taste. The restaurant that elevated and revolutionized the art of interactive dining in the Asia Pacific region has masterfully captured its essence in vibrant pages that excite and tantalize the palate.
“Spiral has connected with diners through food as they celebrate various occasions, whether it’s a family gathering, new milestones or to avail of our featured signature offers. As we celebrate a decade of Spiral, our culinary artisans have compiled recipes of 40 featured favorites from the restaurant’s ateliers to share with eager gourmands who would like to enjoy these dishes from their very own homes,” shares Sofitel Philippine Plaza General Manager Adam Laker. “The book is a tribute to ten wonderful years of gastronomy and wine as presented by Spiral.”
A Decade of Spiral features recipes grouped according to the main ingredient used: Salads and Vegetables, Pork, Chicken, Fish and Seafood, Duck, Beef, Lamb, Cheese and Dessert. An easy visual guide of ingredients, preparations and cooking of the featured dishes “enables guests and diners to experience Spiral right at home by recreating their favorite dishes,” Laker adds. “We picked recipes you can actually cook, presented in a very straightforward way and we believe you can make at home.”
There is a brief history, a detailed section dedicated to wine, introducing aficionados and connoisseurs to the intricate art of tasting and pairing, as well as a glossary for easy reference of home cooks. Some of the favorite recipes include Ebi Tempura, Stir-Fried Spicy Chicken with Thai Basil, Bouillabaisse, Cashew and Pumpkin Nougat and Chocolate Lava Cake.
The gastronomic offerings are presented by seasoned artisans, with the collaboration led by Executive Chef Denis Vecchiato.
